I think it is really interesting how I come up with a recipe. I look into the fridge, look at what is left over and think to myself, “How can I put this together in to something that I haven’t tried before”. Tonight, I had some left-over pork loin roast and I thought, you know that might taste good in a meat loaf.

Meatloaf is great. It is simple, affordable ingredients and when you make lots like I do, it freezes for future meals.

Chunky Tangy Chili Meatloaf (serves 12)

Ingredients:

  • 1.2 kg of Lean ground beef
  • 0.8 kg of Cooked Pork Loin cut in small cubes
  • 1 cup of bread crumbs
  • 2 whole eggs
  • Dell Canada Inc

  • 2 egg whites
  • 250 ml Sweet Chili Sauce
  • 150 ml Teriyaki Sauce
  • 1 tbsp of brown sugar
  • 150 ml Ketchup
  • 75 ml White Wine
  • 1 tsp of Worcestershire Sauce
  • 1 small onion diced
  • 1/2 green pepper diced
  • 5 sliced mushrooms
  • 5 cloves of garlic chopped
  • Ground Pepper
  • 1.5 tbsp of chopped lemon grass
  • 1 tbsp Montreal Steak Spice

Steps:

  1. Combine ground beef with cooked pork, eggs, bread crumbs, onions, green pepper, mushrooms, lemon grass, garlic, Worcestershire Sauce and Steak Spice
  2. Once the mixture is completely incorporated, place the mixture on a a cookie sheet with tin foil. Make the mixture into a log on the sheet. Ensure the the shape is even through out for even cooking.
  3. Lightly sprinkle some steak spice over the meat loaf
  4. Place into a pre-heated oven at 370 degrees Celsius for approx 1 hour (until juices are clear)
  5. Combine ketchup, sugar, Teriyaki Sauce, white wine and remainder of chili sauce. Bast over loaf for a tasty caramelized crust
  6. Enjoy. :smile:
